Visiting mum

April 15th, 2012 at 08:53 am

We went to mum's place today to drop off our bread maker. She's borrowing it to help her mix the dough/pastry for her empanadas. She's been making a lot of those lately, few of her friends have been asking her to make it for them lately. I think she sells them for $1 each, not bad and she loves to cook, it's a hobby for her that and gardening.

It is impossible to go to mum's without getting served some food. Today we had lunch, she had to quickly make fried chickens and spring rolls (she just got home from church so she didn't have anything prepared). I helped her with the dough using the bread maker. She already made the filling early this morning before church.

While there we did more work on fixing couple of cracks on her ceiling. Finally finished one of them, painted and all. Should be able to finish the other one next time. DH and I also cleaned up afterwards, vacuuming all the floors.

We came home with some empanadas and the leftover fried chickens (she always make extra for us to take home), more than enough for dinner.

Today was another NSD. And dinner is done Smile

I'm assuming she makes flour dough for the empanadas. In some Latin American countries, empanada dough is made out of cornmeal. I'm lucky to be able to buy the flour dough for empanadas at our local supermarket. I'm sure is more cost effective making them from scratch.

Yum, that sounds like it leads to a delicious tradeoff, letting her use your appliance in exchange for some insurance of fresh empanadas and the like! Enjoy... and I am sure that it makes her happy to cook for you, too, if she's anything like my mom. Wink Jerry

Oh my, your post brought back a flood of memories of my mom who likewise offered us so many delicious, home made treats...I miss her more than words can describe.

Enjoy these years, may they go on and on....

Debbie - she just used plain flour, I think it was. It's very hard to find cornmeal here in Australia, and it is expensive. I've never seen empanada dough anywhere here. Most people don't know what empanada is. Although now there are more Spanish restaurant maybe it will become popular.

Jerry- yes she loves to cook and not only that she loves to cook for others.

    Thanks Snafu.
